Restaurant of the day: Emilio Innobar in Palma

Mexican, mediterranean and asian – at Emilio and the neighbouring winebar you’ll find this mix of flavours with a lovely, old town ambience.

Chef Emilio Castrejón describes his cuisine as ‘fine fusion’ and this says it all. Particularly worth recommending is the wafer thin sashami with four different types of fish, or the tuna fish tartar. The fillet steak in spicy sauce just melts on the tongue and the Chicken tempura with mango ice cream proves that Castrejón has a strong command of this crossover cuisine. Ceviche is served with prawns and lots of fresh coriander and with a garnish of tortilla chips. Even in the presentation of his dishes Emilio shows that food is more than just a meal: it is art and passion too.

It goes without saying that all ingredients are bought fresh daily. For those who cannot decide what they want from the ever changing, handwritten menu, they can let themselves be surprised and leave it to team Emilio. Thanks to the open kitchen, customers can watch the preparation of each dish and will be given interesting tips on how each one is prepared. In the kitchen you will also see the chef’s son who, in the evenings, is in charge of the neighbouring winebar, which also serves the restaurant. An extensive choice of wines, for example the wide variety of ‘Riesling’, is offered by the German head waiter.

Emilion Castrejón learnt his art in South America and Japan and is always bringing back new ideas from his regular travels away from Palma. Even the set up of the restaurant shows a successful fusion: it is housed in an old building, but has been renovated with attention to detail and is furnished in a modern way. If you want to take a little piece of the restaurant home with you, it is possible to purchase the own brand olive oil produced and used by the chef. Reserving a table is highly recommended.
